Ingredients:-
For the Batter:-
1 cup gram flour (Besan)
1 cup curd
10ml less to 1½ cup of water
1/8th tsp. Turmeric Powder
1 tsp. Ginger-Chilli Paste
Salt to taste
For the Tempering (Tadka):-
1½ tbsp. Oil
1 tsp. Mustard Seeds
Curry Leaves
1½ tbsp. Sesame Seeds
For the Garnish:-
Red Chilli Powder
Grated Coconut
Coriander Leaves
Method:-
Khandvi:-
In a steel saucepan take gram flour, curd, water, turmeric powder, ginger-chilli paste and salt to taste. Blend all these ingredients with a hand blender making sure no lumps are formed.
Take a pressure cooker and heat some water in it. Once the water comes to a simmer, place the saucepan in the it and cook the batter on high flame for 6 whistles. Once the pressure cooker has cooled down take out the batter and stir it properly making sure no lumps remain in it.
Next, pour the batter on a clean plate/counter-top quickly and spread it across the counter-top into thin sheets and let it cool down for 5-6 minutes. After the spread cools down, make cuts it with an inverted knife first across the edges and then on the inside. Roll the Khandvi as shown, with very light fingers. Cut the roll in 1½ inch pieces.
Tempering:-
Heat oil in a wok or kadhai and add mustard seeds, curry leaves and sesame seeds to it. Cook it for a few seconds and turn off the flame. Sprinkle a pinch of red chilli powder on the Khandvi and pour the tempering on it.
Garnish:-
Garnish with grated coconut and coriander leaves.
Delicious Khandvi is ready to eat!
